Ingredients
4 teaspoons minced garlic
1 (28-ounce) can diced tomatoes, drained and liquid reserved
2 tablespoons basil puree, or chopped fresh basil
½ teaspoon dried thyme
2 cups full-sodium chicken broth
garlic salt with parsley flakes, to taste
pepper, to taste
½ cup heavy cream, room temperature
Instructions
1. Saut the minced garlic in a large pot over medium heat, stirring constantly until fragrant.
2. Stir in the tomatoes, basil, and thyme, then cook for about 10 minutes, stirring occasionally.
3. Pour in the chicken broth along with 1 cup of the reserved tomato liquid. Stir the mixture and reduce the heat to medium-low, then simmer uncovered for 35 to 40 minutes, stirring occasionally.
4. Season the soup with garlic salt and pepper to taste.
5. Carefully puree the soup in small batches using a blender until it reaches your desired consistency.
6. Pour the pureed soup back into the pot over low heat, gently stir in the room-temperature heavy cream, and mix well.
7. Taste and adjust the seasonings with more garlic salt and pepper if needed, then serve garnished with croutons, fresh basil, and Parmesan cheese.
Notes
If your tomatoes are particularly acidic, a tiny pinch of sugar added with the tomatoes can help to mellow the flavor without making it sweet.
Add your fresh basil towards the end of cooking to preserve its vibrant color and aromatic qualities. Overcooking basil can make it lose its brightness.
