1 small yellow onion, diced

4 cups low-sodium chicken broth
2 cups heavy cream or half-and-half
1 package (16 oz) potato gnocchi
1 cup fresh spinach, chopped

Instructions

Warm olive oil and butter in a large pot over medium heat. Add diced onion, shredded carrots, and diced celery, cooking until softened for about 5 minutes.

Mix in minced garlic and flour, cooking for 1 minute to create a roux.

Gradually whisk in chicken broth and heavy cream, bringing the mixture to a simmer for 5 minutes until it begins to thicken.

Incorporate the uncooked potato gnocchi and the pre-cooked shredded chicken into the pot.

Let it simmer gently for 4-5 minutes, or until the gnocchi have floated to the top and are tender.

Notes
