1.5 lbs boneless skinless chicken breasts, cut into bite-sized pieces
1 cup long grain white rice, uncooked
1 can (10.5 oz) condensed cream of chicken soup
1 can (10.5 oz) condensed cream of mushroom soup
1.5 cups low-sodium chicken broth
1/2 cup sour cream
1/2 cup unsalted butter, melted
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
Salt and black pepper to taste
1 cup shredded cheddar cheese


Instructions

1. Set your oven to 375F (190C) and lightly grease a 9×13-inch baking dish.
2. In the greased baking dish, combine the uncooked white rice, cream of chicken soup, cream of mushroom soup, chicken broth, sour cream, melted butter, garlic powder, onion powder, salt, and black pepper, mixing until it’s beautifully smooth.
3. Gently season your bite-sized chicken pieces with paprika, salt, and black pepper, then nestle them evenly into the rice mixture.
4. Cover the baking dish snugly with aluminum foil and bake for 45 minutes.
5. Carefully remove the foil, sprinkle the shredded cheddar cheese evenly over the top, and return the dish to the oven, uncovered, for another 10-15 minutes, or until the rice is perfectly tender and the cheese is gloriously melted and bubbling.
6. Allow it to rest for 5-10 minutes before serving.

Notes

Make sure the chicken pieces are distributed evenly throughout the rice mixture to ensure they cook through at the same rate.

While it’s tempting to keep it in the oven longer for extra bubbling, be mindful of the rice. Overcooking can sometimes make the rice a bit too soft. Check for tenderness towards the end of the baking time.

A good greasing of the baking dish prevents anything from sticking, making cleanup a breeze.
