Ingredients
2 large eggs
1 teaspoon vanilla extract
1/4 cup +2 tablespoons olive oil
1/2 cup cottage cheese
1/3 cup maple syrup
1/2 cup coconut sugar can sub brown sugar
3/4 cup pumpkin puree not pumpkin pie mix
1 1/2 cups all purpose flour
1 1/2 teaspoon pumpkin spice
pinch salt
1 1/2 teaspoons baking soda
3/4–1 cup chocolate chips you can omit if desired
Instructions
Preheat the oven to 350 degrees.
In a bowl, combine all the wet ingredients and mix until smooth. Add the dry ingredients (except chocolate chips) and mix until smooth. Fold in the chocolate chips last.
Pour the batter into a loaf pan lined with parchment paper or generously greased.
Bake for 45 minutes to 1 hour, or until a toothpick comes out clean.
