This Cozy Cinnamon Apple Cake is a tender, moist cake studded with sweet, tender apple pieces and infused with the cozy warmth of cinnamon. Perfect for a chilly day or as an elegant dessert.
Ingredients
3 medium crisp apples, peeled, cored, and diced
2 cups all-purpose flour
1 tbsp baking powder
1 tsp salt
1 cup granulated sugar
1/2 cup unsalted butter, softened
2 large eggs
1 tsp vanilla extract
1/2 cup milk
1/3 cup packed brown sugar
1 tbsp ground cinnamon
Instructions
1. Prepare your oven by preheating it to 350 degrees Fahrenheit (175 degrees Celsius) and greasing a 9-inch springform pan or square baking dish.
2. In a medium bowl, whisk together the flour, baking powder, and salt.
3. In a separate small bowl, combine the diced apples with brown sugar and ground cinnamon, then set aside.
4. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, followed by the vanilla extract.
5. Gradually add the dry flour mixture and milk to the butter mixture, alternating between them and mixing just until everything is combined.
6. Gently fold two-thirds of the cinnamon apple mixture into the batter and pour it into your prepared pan.
7. Sprinkle the remaining apple mixture evenly over the top of the batter.
8. Bake for 45 to 50 minutes, or until a toothpick inserted into the center comes out clean.
9. Allow the cake to cool in the pan for 15 minutes before serving warm.
Notes
The toothpick test is your best friend here. Insert it into the thickest part of the cake, avoiding any apple chunks, to ensure it comes out clean. If it has wet batter, it needs a few more minutes.
Be mindful not to overmix the batter once the flour is added, as this can develop gluten and lead to a tougher cake. Mixing just until combined is key for tenderness.
Properly greasing and flouring your pan (or using parchment paper for the base if using a springform) is essential for easy removal and preventing sticking.
Allowing the cake to cool in the pan for the specified 15 minutes before attempting to remove it helps the cake set and firm up, preventing it from falling apart.
