1.5 lbs boneless skinless chicken breasts
1 cup long grain wild rice blend (uncooked)
1 medium yellow onion, diced
3 medium carrots, diced
3 ribs celery, diced
3 cloves garlic, minced
6 cups chicken broth
1 tsp dried thyme
1 tsp poultry seasoning
1/2 cup unsalted butter
1/2 cup all-purpose flour
1 cup heavy cream
Salt and black pepper to taste
Fresh parsley for garnish


Instructions

In a generous pot, bring together the chicken, wild rice, chopped onion, carrots, celery, garlic, broth, thyme, poultry seasoning, salt, and pepper.

Heat to a boil, then lower the heat, cover, and let it gently simmer for about 40-45 minutes until the rice is soft and the chicken is cooked.

Take out the chicken, pull it apart with two forks, and put it back into the pot.

In a small pan, melt the butter over medium heat. Whisk in the flour and cook for one minute until it begins to bubble.

Slowly whisk in the heavy cream and cook until the sauce becomes thick.

Gently stir the cream mixture into the soup and let it simmer on low for five minutes until it’s beautifully creamy.

Taste and add more salt and pepper if needed, then finish with fresh parsley and serve hot.
