Ingredients
1 lb lean ground beef
1/2 head green cabbage, chopped into bite-sized pieces
1 medium yellow onion, diced
3 cloves garlic, minced
2 carrots, diced
1 can (15 oz) tomato sauce
1 can (14.5 oz) diced tomatoes
4 cups beef broth
1 cup cooked white rice
1 tbsp brown sugar
1 tbsp lemon juice
1 tsp Worcestershire sauce
Salt and black pepper to taste
Fresh parsley for garnish
Instructions
Brown the ground beef with the diced onion in a large pot over medium-high heat until no pink remains. Drain any extra fat.
Add the minced garlic and diced carrots, cooking for two minutes.
Stir in the tomato sauce, diced tomatoes, beef broth, brown sugar, lemon juice, Worcestershire sauce, salt, and black pepper.
Add the chopped cabbage and bring the soup to a boil.
Lower the heat, cover, and let it simmer for 25 to 30 minutes, or until the cabbage is tender.
Stir in the cooked white rice and cook for five minutes to heat through.
Adjust seasonings to your liking before topping with fresh parsley and serving warm.
