Cozy Cabbage Roll Soup

Cozy Cabbage Roll Soup

  • Total Time: Approximately 40 minutes
  • Yield: 6-8 servings 1x

Description

This Cozy Cabbage Roll Soup captures all the beloved flavors of classic cabbage rolls in an easy, hearty soup form. It’s a wonderfully warming dish that’s perfect for a chilly evening or when you just need a hug in a bowl.

Ingredients

Scale

1 lb lean ground beef
1/2 head green cabbage, chopped into bite-sized pieces
1 medium yellow onion, diced
3 cloves garlic, minced
2 carrots, diced
1 can (15 oz) tomato sauce
1 can (14.5 oz) diced tomatoes
4 cups beef broth
1 cup cooked white rice
1 tbsp brown sugar
1 tbsp lemon juice
1 tsp Worcestershire sauce
Salt and black pepper to taste
Fresh parsley for garnish

Instructions

Brown the ground beef with the diced onion in a large pot over medium-high heat until no pink remains. Drain any extra fat.

Add the minced garlic and diced carrots, cooking for two minutes.

Stir in the tomato sauce, diced tomatoes, beef broth, brown sugar, lemon juice, Worcestershire sauce, salt, and black pepper.

Add the chopped cabbage and bring the soup to a boil.

Lower the heat, cover, and let it simmer for 25 to 30 minutes, or until the cabbage is tender.

Stir in the cooked white rice and cook for five minutes to heat through.

Adjust seasonings to your liking before topping with fresh parsley and serving warm.

Notes

For easier eating, aim for bite-sized pieces of cabbage, about 1-inch squares or slightly smaller. This ensures it cooks evenly and is comfortable to scoop with a spoon.

Properly draining the fat from the ground beef is key to preventing an overly greasy soup. Tip the pot to one side and carefully spoon or pour off the excess fat.

The simmering time is crucial for tender cabbage. If you prefer it softer, you can simmer for a few extra minutes, but be mindful not to let it disintegrate.

Incorporate the rice. Continue to simmer, uncovered, for about five more minutes, just until the rice is heated through.

Tasting and adjusting seasoning at the end is so important for any soup. The balance of sweet, savory, and tangy can be tweaked to perfectly suit your palate.
