Ingredients
2 cups rolled oats
1 tsp baking powder
1.5 tsp ground cinnamon
1/4 tsp ground nutmeg
1/2 tsp salt
2 medium apples, cored and diced
1/2 cup chopped walnuts or pecans
2 cups whole milk
1/3 cup pure maple syrup
1 large egg
2 tbsp unsalted butter, melted
1 tsp vanilla extract
Instructions
Preheat your oven to 375°F (190°C). Lightly grease an 8×8 inch baking dish or a similar sized oven-safe dish.
In a medium-sized mixing bowl, combine the rolled oats, baking powder, ground cinnamon, ground nutmeg, and salt. Whisk these dry ingredients together until they are well distributed.
Gently fold the diced apples and chopped walnuts or pecans into the dry oat mixture. Ensure they are evenly coated.
In a separate bowl, whisk together the whole milk, pure maple syrup, large egg, melted unsalted butter, and vanilla extract. Whisk until everything is smoothly combined and slightly frothy.
Pour the wet ingredient mixture over the oat, apple, and nut mixture in the baking dish. Gently stir to ensure all the dry ingredients are moistened and the liquid fills any spaces.
Place the baking dish in the preheated oven and bake for 30–35 minutes, or until the oatmeal is set and the top is a beautiful golden brown.
Once baked, remove the dish from the oven and let it rest for at least 5–10 minutes before serving. This allows the baked oatmeal to firm up slightly.
