Ingredients
3/4 cup all-purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1 tbsp pumpkin pie spice
1/4 tsp salt
3 large eggs
1 cup granulated sugar
2/3 cup canned pumpkin puree
1/4 cup powdered sugar (for dusting towel)
8 oz cream cheese, softened
1 cup powdered sugar (for filling)
6 tbsp unsalted butter, softened
1 tsp vanilla extract
Instructions
Prepare your oven and a jelly roll pan by preheating the oven and lining the pan with greased parchment paper.
Combine the flour, baking powder, baking soda, pumpkin pie spice, and salt in a mixing bowl.
Whip the eggs and granulated sugar together until they become thick and pale, then gently incorporate the pumpkin puree.
Carefully fold the dry ingredients into the pumpkin batter, spread it evenly into the prepared pan, and bake until a gentle touch springs back.
Dust a clean kitchen towel with powdered sugar, invert the warm cake onto it, remove the parchment paper, and roll the cake up with the towel from the shorter side, allowing it to cool fully.
In a separate bowl, blend the softened cream cheese, powdered sugar, butter, and vanilla extract until a smooth filling forms.
Unroll the completely cooled cake, spread the cream cheese filling over it, then re-roll the cake without the towel, wrap it in plastic, and chill for an hour before dusting and slicing.
Notes
Your cake is ready when a gentle touch to the center springs back immediately. Avoid overbaking, as this can dry out the cake and make it prone to cracking.
Allowing the cake to cool completely in the rolled towel is vital. This step creates the flexibility needed to roll it again without breaking.
For both the cake batter and the frosting, ensuring your eggs, butter, and cream cheese are at room temperature will result in a smoother batter and a creamier frosting.
When spreading the filling, try to get as close to the edges as possible to ensure every bite has a good balance of cake and frosting.
