Ingredients
• 1 lb smoked turkey sausage or beef kielbasa, sliced into 1/2-inch coins
• 1 can or jar (16 oz) sauerkraut, rinsed and drained
• 2 tbsp unsalted butter
• 1 small yellow onion, thinly sliced
• 1 medium Gala or Honeycrisp apple, cored and diced
• 1/2 cup beef or chicken broth
• 1 tbsp brown sugar
• 1 tsp caraway seeds
• 1 tsp Dijon mustard
• Black pepper to taste
Instructions
First, melt butter in a large skillet over medium-high heat.
Next, add the sliced sausage and cook until browned, then set aside.
Sauté the onion and apple until tender in the same skillet.
Stir in the sauerkraut, broth, brown sugar, caraway seeds, Dijon mustard, and pepper.
Return the sausage to the skillet and simmer, covered, until the flavors have beautifully melded.
Serve warm.

Don’t skip rinsing your sauerkraut! It helps to remove some of the excess brine and vinegar, resulting in a more balanced flavor that harmonizes better with the sweet apple and savory sausage.
Aim for consistent 1/2-inch thick slices of sausage. This ensures they cook evenly and develop a lovely browned exterior without becoming dry.
