Ingredients
6 cups crisp apples (Honeycrisp or Granny Smith), peeled, cored, and sliced
2 tbsp granulated sugar
1 tsp ground cinnamon
1 tbsp fresh lemon juice
1 cup rolled oats (topping)
1/2 cup all-purpose flour (topping)
1/2 cup packed light brown sugar (topping)
1/2 cup (1 stick) cold unsalted butter, cubed (topping)
1/2 tsp ground cinnamon (topping)
Pinch of salt
Instructions
First, preheat your oven to 350F and prepare an 8×8 inch baking dish.
In a large bowl, combine your peeled, cored, and sliced apples with the granulated sugar, cinnamon, and lemon juice. Toss gently to coat the apples evenly, then pour them into the prepared baking dish, spreading them out in a single layer.
Next, it’s time to whip up that amazing topping. In a separate medium bowl, whisk together the rolled oats, all-purpose flour, packed light brown sugar, cinnamon, and a pinch of salt.
Add the cold, cubed butter to this dry mixture. Using your fingertips, a pastry blender, or two forks, cut the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized pieces of butter still visible.
Evenly spread this crumbly topping over the apple mixture in the baking dish.
Place the dish in the preheated oven and bake for 40-45 minutes, or until the topping is golden brown and the apple filling is bubbly and tender when pierced with a fork.
Let it cool for a few minutes before serving to allow it to set slightly.
Notes
Aim for apple slices that are about 1/4 to 1/2 inch thick. Too thin and they might become mushy; too thick and they may not cook through evenly.
You’ll know the crisp is ready when the topping is a lovely golden brown and you can see the apple filling bubbling around the edges. A fork should easily pierce the apple slices.
While this recipe is designed for a delicious crisp, ensure your apples aren’t overly watery. Patting them dry after slicing can help, though the lemon juice and sugar will draw out some moisture.
If your oven tends to have hot spots, you might consider rotating the baking dish halfway through the baking time.
