1 cup granulated sugar
1/2 cup light brown sugar, packed
1 box (0.74 oz) instant apple cider drink mix (about 4 packets)
2 large eggs
1 tsp vanilla extract
3 cups all-purpose flour
1 tsp baking soda
1/2 tsp baking powder
1 tsp ground cinnamon
1/2 tsp salt
20 soft caramel candies, unwrapped


Instructions

Warm up your oven to 350F (175C) and prepare your baking sheets with parchment paper.
In a bowl, combine the softened butter, granulated sugar, brown sugar, and apple cider drink mix until it’s light and fluffy.
Add the eggs one at a time, followed by the vanilla extract.
In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt, then gradually add this dry mixture to the wet ingredients until a dough forms.
Take about 2 tablespoons of dough, flatten it, place a caramel candy in the center, and carefully wrap the dough around it, rolling it into a ball to ensure the caramel is fully enclosed.
Arrange the cookie balls on the baking sheets, leaving about 2 inches between them.
Bake for 12 to 14 minutes, or until they turn golden brown.
Let them cool on the baking sheet for 5 minutes before moving them to a wire rack to finish cooling.
