Description
This high-protein cottage cheese queso is a silky, velvety dip that delivers the perfect melty, zesty flavor for game days or cozy nights at home.
Ingredients
1 cup cottage cheese
1 cup freshly shredded cheddar cheese (plus more for serving)
1 tablespoon taco seasoning
Chopped tomatoes (for serving)
Chopped cilantro (for serving)
Instructions
1. Blend cottage cheese in a blender or food processor until completely smooth.
2. Pour the blended cottage cheese into a small saucepan. Stir in the shredded cheddar cheese and taco seasoning.
3. Heat over medium-low heat, whisking constantly, for about 5 minutes until the cheese is melted and the mixture is smooth and creamy. Remove from heat immediately once melted. If it needs to be smoother, blend it again.
Notes
Temperature control: If the stove is too hot, the cheese can break. Keep it on a low flame and take your time whisking.
Consistency check: If the dip seems too thick after melting, you can thin it out with a tiny splash of milk or water, though the cottage cheese usually provides the perfect starting viscosity.
Serve warm: This queso is best enjoyed immediately while it is still warm and at its peak melty consistency.
Freshness matters: Always add your cilantro and tomatoes right at the very end as a garnish. This prevents them from wilting into the hot cheese and keeps the dip looking vibrant.
