These fluffy cottage cheese pancakes are a delightful twist on a classic breakfast treat. They boast a tender, slightly tangy interior with a golden-brown exterior, perfect for those weekend mornings when you want something a little special. Serve them with fresh berries, a drizzle of maple syrup, and a dollop of whipped cream for a truly unforgettable breakfast experience.
Ingredients
1/4 cup cottage cheese (4% milkfat)
1 large egg
2 tablespoons all-purpose flour (or 2 1/2 tablespoons gluten free all-purpose flour)
1/2 teaspoon baking powder
teeny tiny bit of salt (let’s say 1/8 teaspoon)
1/2 tablespoon butter for frying
maple syrup and butter for serving
Instructions
1. Blend the batter: Combine cottage cheese, egg, flour, baking powder, and salt in a blender until smooth.
2. Melt the butter: Heat a nonstick pan over medium-high heat, then add butter until melted.
3. Cook the pancake: Pour all the batter into the pan.
4. Flip and finish: Cook until bubbles form, about 1-2 minutes. Flip and cook for another 1-2 minutes until golden.
5. Serve: Serve with butter and maple syrup.
Notes
Use a non-stick griddle or pan to prevent sticking; this helps achieve the perfect golden-brown color.
Don’t flip your pancakes too early. Wait until bubbles start to form on the surface and the edges look set.
Be gentle when mixing the wet and dry ingredients. A few lumps are okay.
Adjust the cooking time based on your stove and griddle; the goal is a perfectly cooked interior.
Serve these immediately for the best taste and texture.
