Ingredients
1 unbaked 9-inch deep-dish pie crust
2 cups cooked and mashed sweet potatoes (about 2 medium potatoes)
1/2 cup (1 stick) unsalted butter, softened
1 cup granulated sugar
1/2 cup heavy cream or evaporated milk
2 large eggs, room temperature
1 tsp vanilla extract
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground ginger
1/4 tsp salt
Instructions
Prepare your oven to 350F (175C) and place the unbaked pie crust into a 9-inch pie plate, carefully crimping the edges.
Combine the mashed sweet potatoes and softened butter in a large bowl, mixing until smooth.
Incorporate the granulated sugar, heavy cream, eggs, vanilla extract, cinnamon, nutmeg, ginger, and salt, beating until the custard filling is perfectly smooth.
Gently pour the sweet potato filling into the unbaked pie crust and level the top with a spatula.
Bake for 55-60 minutes, or until the center is set and a knife inserted near the middle comes out clean.
Allow the pie to cool completely on a wire rack for 2 hours before slicing and serving with a dollop of whipped cream.
Notes
For an extra smooth filling, you can pass your mashed sweet potatoes through a food mill or sieve before combining them with the butter. This ensures there are no stringy bits and creates a luxurious texture.
The best way to tell if your sweet potato pie is done is by gently shaking the pie plate. The edges should be set, but the very center might still have a slight wobble. A knife test near the center is also a reliable indicator.
Overbaking can sometimes lead to cracks in the filling. Keep a close eye on your pie during the last 10 minutes of baking. If the edges are set but the center is still a bit wobbly, it’s likely ready. Cooling slowly also helps prevent cracking.
