Description

1/2 cup unsalted butter, softened
1/2 cup creamy peanut butter
1/2 cup granulated sugar (plus extra for rolling)
1/2 cup packed light brown sugar
1 large egg
1 tsp vanilla extract
1.5 cups all-purpose flour
3/4 tsp baking soda
1/2 tsp baking powder
36 milk chocolate Hershey’s Kisses, unwrapped


Instructions

Preheat your oven to 375 degrees Fahrenheit and prepare two baking sheets with parchment paper.

Cream together the softened butter, peanut butter, granulated sugar, and brown sugar until smooth.

Stir in the egg and vanilla extract until well combined.

In a separate bowl, whisk together the flour, baking soda, and baking powder, then gradually mix this into the peanut butter batter until a dough forms.

Roll the dough into 1-inch balls and then coat each ball generously in granulated sugar.

Arrange the dough balls about 2 inches apart on your prepared baking sheets.

Bake for 8 to 10 minutes, or until they are lightly golden brown.

As soon as the cookies come out of the oven, press a milk chocolate Hershey’s Kiss firmly into the center of each one.

Let them cool on a wire rack.

Notes

Ensure your butter and egg are at room temperature. This is vital for achieving a smooth, well-emulsified cookie dough that bakes evenly.

Keep a close eye on your cookies during the last few minutes of baking. Overbaking can lead to dry cookies, and you want them to remain wonderfully chewy.

When pressing the Hershey’s Kiss into the warm cookie, do so gently but firmly. You want the Kiss to sink in slightly and start to melt, but not so hard that you crack the cookie.
