Classic Oatmeal Raisin Cookies

  • Total Time: Approximately 30 minutes (plus cooling)

Description

These classic oatmeal raisin cookies are wonderfully simple to make and deliver that perfect balance of textures and flavors that makes them a timeless favorite. A taste of home, a comforting hug in edible form, with chewy oats, sweet raisins, and just the right hint of spice.

Ingredients

Scale

0.75 cup butter, softened
0.75 cup white sugar
0.75 cup packed light brown sugar
2 large eggs
1 teaspoon vanilla extract
1.25 cups all-purpose flour
1 teaspoon baking soda
0.75 teaspoon ground cinnamon
0.5 teaspoon salt
2.75 cups rolled oats
1 cup raisins

Instructions

Preheat your oven to 375 degrees F (190 degrees C). Line two cookie sheets with parchment paper or silicone liners.

Cream together the softened butter, white sugar, and light brown sugar in a large bowl until smooth and creamy. Beat in the eggs and vanilla extract until the mixture is fluffy.

In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt. Gradually add this dry mixture to the butter mixture, beating until just combined. Stir in the rolled oats and raisins. Drop rounded teaspoonfuls of dough about 2 inches apart onto the prepared cookie sheets.

Bake for 8 to 10 minutes, or until golden brown. Switch oven racks halfway through baking. Let the cookies rest on the cookie sheets for 1 to 2 minutes before transferring them to a wire rack to cool completely.

Notes

Ensure your butter is truly softened, not melted. You should be able to press into it easily with your finger, but it shouldn’t be greasy. This is key for proper creaming.

Once you add the dry ingredients to the wet, mix only until just combined. Overmixing can develop the gluten in the flour too much, resulting in tougher cookies.

Ovens can vary. If you find your cookies tend to bake too quickly or too slowly, consider using an oven thermometer to check your oven’s actual temperature.

Resist the urge to move the cookies too soon after baking. The brief rest on the hot baking sheet helps them set up beautifully, preventing them from falling apart. Transferring them to a wire rack allows air to circulate, preventing a soggy bottom.
