Ingredients
4 large yellow onions, thinly sliced
4 tbsp unsalted butter
2 tbsp olive oil
3 cloves garlic, minced
1 tbsp all-purpose flour
6 cups low-sodium beef broth
1 tbsp apple cider vinegar
1 tsp Worcestershire sauce
1 tsp dried thyme
1 bay leaf
Salt and black pepper to taste
1 French baguette, sliced into 1-inch rounds
1.5 cups Gruyère cheese, grated
1/2 cup Parmesan cheese, grated
Instructions
Gently melt butter and olive oil in a large pot over medium heat, then add thinly sliced onions and stir often for about 35-40 minutes until they are beautifully caramelized and golden brown.
Stir in minced garlic for one minute until fragrant, then sprinkle in flour and cook for another minute.
Slowly pour in the beef broth, apple cider vinegar, and Worcestershire sauce, making sure to scrape up any delicious browned bits from the bottom of the pot.
Add thyme, bay leaf, salt, and pepper, bring to a boil, then reduce heat, cover, and let it simmer for 20 minutes.
Toast baguette slices until crisp, remove the bay leaf from the soup, ladle into bowls, top with the toasted bread, and a generous amount of Gruyre and Parmesan cheese.
Broil for 3-4 minutes until the cheese is melted and golden, then serve piping hot.
