Ingredients
1 lb ground beef (80/20 fat ratio for best flavor)
1 teaspoon kosher salt
1/2 teaspoon black pepper
4 slices American or cheddar cheese
2 hamburger buns, toasted
Optional toppings: lettuce, sliced tomato, pickles, thinly sliced red onion
Burger Sauce:
2 tablespoons mayonnaise
1 tablespoon ketchup
1 teaspoon relish
Instructions
1. Divide the ground beef into 4 portions and gently form thin patties. Avoid overworking the meat. Make a slight dimple in the center of each patty.
2. Heat a cast-iron skillet or griddle over medium-high heat until very hot.
3. Season the patties with salt and pepper just before cooking.
4. Place the patties in the hot skillet. Cook for 2-3 minutes on the first side until a dark, crusty sear forms.
5. Flip the patties and immediately place a slice of cheese on each. Cover the skillet for 1 minute to melt the cheese.
6. Assemble by placing two cheesy patties on each toasted bun. Add your desired toppings and a good amount of burger sauce on both halves of the bun. Serve right away.
Notes
The key to tender burgers is handling the ground beef as little as possible. Over-mixing or over-handling can make them dense and tough.
Ensure your skillet is properly preheated before adding the patties. This is essential for achieving a beautiful sear and developing those deeply flavorful browned bits.
If your cheese isn’t melting as quickly as you’d like, you can briefly cover the skillet for about 30 seconds to help trap heat and speed up the melting process.
A slightly warm or toasted bun makes all the difference in the final burger experience, providing a better texture and holding up better to juicy patties.
