Classic Coconut Dream Bars Recipe

  • Total Time: Approximately 50 minutes (plus cooling time)
  • Yield: 16-20 bars 1x

Description

These delightful coconut dream bars are a slice of pure bliss, a perfect blend of soft, chewy goodness and sweet, tropical coconut flavor that will transport you straight to a sunny paradise. They’re wonderfully easy to make, making them a go-to treat for any occasion or just because. These bars, with their golden crust and sweet coconut topping, are pure sunshine in every bite.

Ingredients

Scale

2 cups graham wafer crumbs (or digestive biscuit crumbs)
1/4 cup sugar
1/2 cup melted butter
1 can sweetened condensed milk (300ml in Canada, 14 oz in the US)
2 cups unsweetened dried coconut (dessicated coconut)
2 teaspoon vanilla extract
1 1/4 cups chocolate chips
3 tablespoon butter or whipping cream

Instructions

Preheat your oven to 350 degrees F.
Prepare a 9×9 inch baking pan by greasing it and lining it with parchment paper.
Melt 1/2 cup of butter. In a bowl, combine the melted butter with graham cracker crumbs and sugar.
Press this crumb mixture firmly into the bottom of the prepared pan.
Bake the crust for 10 minutes.
While the crust bakes, mix together the sweetened condensed milk, unsweetened dried coconut, and vanilla extract.
Evenly spread the coconut mixture over the baked graham crust.
Bake for an additional 10-15 minutes, or until the edges are lightly golden brown. Avoid overbaking to keep the bars moist.
Let the bars cool completely in the pan after removing them from the oven.
Once cooled, melt the chocolate chips with 3 tablespoons of butter or whipping cream.
Spread the melted chocolate evenly over the cooled coconut layer. Let it set for about an hour.
Cut into squares and enjoy.

Notes

Ensure your butter is truly softened, not melted, for the base mixture. This will help it combine into those lovely coarse crumbs.

Take your time to press the base evenly into the pan. This ensures a uniform crust that holds up well to the topping.

Keep an eye on the bars as they near the end of their baking time. You’re looking for a lovely golden-brown color, especially around the edges. Overbaking can lead to a dry bar.

Patience is key! Allowing the bars to cool completely before cutting is crucial for clean slices and a well-set texture.
