Description

4 large boneless skinless chicken breasts
8 slices deli turkey ham or smoked beef ham
8 slices Swiss cheese
1/2 cup all-purpose flour
2 large eggs, beaten
1.5 cups panko breadcrumbs
1/2 tsp garlic powder
1/2 tsp smoked paprika
Salt and black pepper to taste
2 tbsp unsalted butter, melted


Instructions

Preheat your oven to 375F and line a baking sheet.
Carefully slice a pocket into each chicken breast and season them inside and out.
Fold Swiss cheese slices within ham slices and tuck them into the chicken pockets, securing with toothpicks.
Coat the chicken in flour, then beaten egg, and finally a generous layer of panko.
Arrange the chicken on the baking sheet and brush with melted butter.
Bake for 30 to 35 minutes until beautifully golden and cooked through, remembering to remove the toothpicks before serving.

Notes

Try to select chicken breasts that are similar in size and thickness. If one is much thicker than another, you can gently pound the thicker part to even it out for more consistent cooking.

While it’s tempting to pack in as much cheese and ham as possible, be careful not to overstuff the pockets. This can cause the filling to leak out during baking.

Make sure the chicken is completely dry before you start the breading process. This will help the flour, egg, and panko adhere better for a crispier result.

Once the chicken is out of the oven, let it rest for a few minutes before slicing. This allows the juices to redistribute, ensuring a more tender and flavorful bite.
