Description
These elegant chocolate mousse cups offer a velvety smooth texture that melts in your mouth, with a touch of espresso deepening the rich chocolate notes. Simple to make and wonderfully adaptable, they are perfect for any occasion.
Ingredients
200 g dark or semi-sweet chocolate (finely chopped)
2 teaspoon espresso powder
1 teaspoon vanilla extract
400 g whipping cream (divided into 200g + 200g)
100 g whipping cream (cold)
1 tablespoon powdered sugar
1/2 teaspoon vanilla extract
2 fresh strawberries (halved)
Instructions
Combine finely chopped dark or semi-sweet chocolate, espresso powder, and vanilla extract in a small bowl.
Heat 200g of whipping cream until it just simmers. Pour over the chocolate mixture and let it sit for 2 minutes before stirring to melt the chocolate. Set aside.
Whip the remaining 200g of whipping cream to soft peaks.
Gently fold the melted chocolate mixture into the whipped cream until smooth.
Spoon the mousse into serving glasses.
Chill for at least 4 hours or overnight until set.
Separately, whip 100g cold whipping cream with powdered sugar and vanilla extract until firm peaks form.
Top each mousse cup with a dollop of whipped cream, a strawberry half, and chocolate shavings.
Serve chilled for a fudgier texture, or let sit at room temperature for 15 minutes for a creamier consistency.
Notes
Using good quality chocolate makes a noticeable difference in the final flavor and texture of your mousse. Avoid using chocolate chips, as they often contain stabilizers that can affect melting.
When heating the cream for the ganache, watch it closely. You only want it to reach a simmer, not a rolling boil, to avoid scalding the cream.
While the cream for whipping the topping needs to be cold, the chocolate and the cream for the ganache should be at a temperature that allows them to melt smoothly without being too hot. Let the ganache cool slightly before folding it into the whipped cream to prevent melting the whipped cream.
The key to a light and airy mousse is to retain the air incorporated into the whipped cream. Use a spatula and a gentle, sweeping motion to fold the ingredients together.
Don’t rush the chilling process. Adequate time in the refrigerator allows the mousse to set properly, achieving that desirable fudgy consistency.
