These moist and delicious chocolate chip zucchini bars are the perfect treat for using up that garden zucchini. With a tender crumb and studded with chocolate chips, they’re a delightful way to enjoy a classic flavor combination.
Ingredients
3 cups grated zucchini about 1.5–2 zucchinis
1 ½ cups brown sugar
½ cup butter melted
¼ cup milk
3 eggs
2 ½ cups all-purpose flour
2 tsp baking powder
1 tsp salt
1 ½ tsp ground cinnamon
½ tsp nutmeg
¾ cup mini chocolate chips
½ cup regular chocolate chips
½ cup chopped walnuts
Instructions
1. Preheat the oven to 325 degrees F. Spray a 15×10.5″ pan with non-stick spray and set aside. Wash, trim, and grate the zucchini.
2. In a large bowl, whisk together the brown sugar, melted butter, milk, and eggs.
3. Add the flour, baking powder, salt, cinnamon, and nutmeg, then mix well. Fold in the zucchini, walnuts, and cup of mini chocolate chips.
4. Spread the batter into the prepared pan and sprinkle with cup of regular chocolate chips.
5. Bake for 30 minutes, or until a toothpick inserted in the center comes out clean. Let cool in the pan for 15-20 minutes. Cut into squares and enjoy.
Notes
Don’t Overmix: Overmixing can develop the gluten in the flour, resulting in a tougher texture. Mix the batter just until the ingredients are combined.
Grate the Zucchini Finely: This helps the zucchini to blend seamlessly into the batter.
Cool Completely: Allowing the bars to cool completely before cutting ensures they don’t crumble and makes for clean, neat squares.
Storage: Store the bars in an airtight container at room temperature for up to 3 days.
