These Chipotle Lime Chicken Wings are everything you could want in a flavorful appetizer or game-day snack. Imagine perfectly cooked chicken wings, with a smoky kick from chipotle peppers and a burst of zesty lime. Ready in about an hour, they’re the perfect crowd-pleaser for any occasion.
Ingredients
20 fresh chicken drumettes or wings
1/4 cup mayonnaise
CHIPOTLE SEASONING RUB
1 tablespoon brown sugar
2 teaspoons salt
1 1/2 teaspoons chili powder can more if desired
1/2 teaspoon black pepper
1/2 teaspoon Old Bay w/ Blackening seasoning optional, but yum!
2 teaspoons chipotle powder add more if you like heat
1 1/2 teaspoons garlic powder
1 teaspoon onion powder
3/4 teaspoon paprika
1/2 teaspoon cumin
can also add a bit of dried cilantro if desired
Juice of 1 lime
Fresh cilantro garnish
AVOCADO SAUCE
1 avocado
5 Tablespoons sour cream
2 Tablespoons fresh cilantro chopped
3 cloves of garlic minced
Juice of 1 lime
salt and pepper to taste
Instructions
Brush the wings with mayonnaise.
Combine the chipotle seasoning spices.
Sprinkle the spice mixture over the chicken, making sure to coat them well.
Cover and chill for an hour.
Preheat the oven to 450 degrees.
Place the chicken on an oiled, foil-lined baking sheet.
Bake for 20 minutes, then drain the juices.
Return the chicken to the oven and broil until the skin crisps. Watch carefully!
Arrange the chicken on a platter, garnishing with fresh cilantro and lime juice.
Make the avocado sauce by pureeing avocado and sour cream. Add cilantro, garlic, plus water to thin (if desired). Puree until smooth, then stir in lime juice, salt, and pepper.
Notes
Pat the Wings Dry: Before marinating, pat the wings dry with paper towels to ensure crispy skin.
Don’t Overcrowd the Pan: Make sure the wings aren’t touching each other on the baking sheet to allow for even cooking and crisping.
Check the Temperature: Use a meat thermometer to make sure the wings reach an internal temperature of at least 165 degrees Fahrenheit.
Adjust Baking Time As Needed: Cooking times may vary depending on your oven. Keep an eye on the wings during the last few minutes of baking to prevent burning.
Resting Time: Let the wings rest for a few minutes after taking them out of the oven to allow the juices to redistribute.
