½ cup sour cream
1½ tablespoons fresh lime juice

1 teaspoon honey
¼ to ½ teaspoon salt, to taste
Corn Salsa:
3 to 4 ears corn, cooked and kernels removed (about 2 cups)
¼ cup diced red onion
1 jalapeño, seeded and diced
3 tablespoons chopped fresh cilantro
Juice of 1 lime
Salt, to taste
Air Fryer Sweet Potato:
2 large sweet potatoes, peeled and cut into cubes
1 tablespoon avocado oil or olive oil
Salt, to taste
Black pepper, to taste


Instructions

1. Whisk together sour cream, lime juice, chipotle adobo sauce, honey, and salt until smooth. Refrigerate to use later.

2. Combine cooked corn, red onion, jalapeño, and cilantro in a bowl. Add lime juice and salt, then toss and refrigerate.

3. Toss cubed sweet potatoes with avocado oil, salt, and pepper in a bowl.

4. Air fry sweet potatoes at 390F for 18-20 minutes, shaking halfway, until golden and tender.

5. Assemble bowls with sweet potatoes, shredded beef, corn salsa, and a drizzle of chipotle-honey crema.
