Ingredients
1.5 lbs ground chicken
1/2 cup panko breadcrumbs
1/2 cup grated Parmesan cheese
1 large egg
2 cloves garlic, minced
1 tsp Italian seasoning
1/2 tsp garlic powder
Salt and black pepper to taste
1.5 cups marinara sauce
1 cup shredded mozzarella cheese
Fresh basil leaves, chopped for garnish
Instructions
Preheat your oven to 400F and lightly grease a baking dish.
Combine chicken, breadcrumbs, Parmesan, egg, garlic, seasonings, salt, and pepper in a bowl. Form into meatballs and bake until golden. Top with marinara and mozzarella, then bake again until the cheese is melted. Garnish with basil before serving.
Notes
When combining the meatball ingredients, mix just until everything is incorporated. Overworking the ground chicken can result in tough, dense meatballs.
Try to make your meatballs roughly the same size. This helps them cook evenly.
For the most accurate doneness, you can use a meat thermometer. The internal temperature should reach 165F.
Lightly greasing your baking dish, or lining it with parchment paper, will make cleanup a breeze and prevent any sticking.
If the cheese isn’t quite as melted as you’d like after the second bake, you can always pop the dish under the broiler for a minute or two, keeping a very close eye on it to prevent burning.
