Ingredients
2 (15oz) cans cannellini beans or great northern beans
1 cup cottage cheese
1/3 cup hot sauce
1/4 cup ranch or bleu cheese dressing
1 1/2 cups shredded cheddar cheese
1/4 teaspoon garlic powder
salt & pepper to taste
2 tablespoons diced green onion (for garnish)
tortilla chips, crackers, or celery sticks for serving
Instructions
Preheat oven to 350°F (175°C)
Drain and rinse beans, then pulse in a food processor until slightly chunky
In a bowl, combine beans, cottage cheese, hot sauce, ranch dressing, garlic powder, salt, and pepper
Mix until smooth in spots with visible bean chunks
Transfer mixture to a baking dish, top with shredded cheddar cheese
Bake for 25–30 minutes until cheese is melted and bubbly
Garnish with green onions before serving
Notes
Drain beans thoroughly for optimal texture
Use low-fat cottage cheese for a lighter version
Replace ranch dressing with Greek yogurt for a dairy-free alternative
Add 1/2 cup cooked non-pork bacon or sausage for extra protein
Swap cottage cheese with blended tofu for a vegan option
Blue cheese dressing can be used instead of ranch for bolder flavor
