Ingredients
1 pre-made pizza dough (store-bought or homemade), room temperature
1 tablespoon olive oil
1/2 cup whole milk ricotta cheese
1 cup low-moisture mozzarella cheese, freshly shredded
1/2 cup sharp cheddar cheese, shredded
4 large eggs
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 tablespoon fresh chives, finely chopped
Instructions
1. Preheat your oven to 425F (220C). If using a pizza stone, place it in the oven while it preheats. Otherwise, line a baking sheet with parchment paper.
2. Stretch or roll out the pizza dough into a 10-12 inch circle and place it on your prepared baking sheet.
3. Lightly brush the entire surface of the dough with olive oil.
4. Spread the ricotta cheese evenly over the dough, leaving a 1-inch border.
5. Sprinkle the mozzarella and cheddar cheeses over the ricotta.
6. Create 4 small wells in the cheese layer using the back of a spoon.
7. Carefully crack one egg into each well.
8. Bake for 10 to 13 minutes, or until the crust is golden brown, the cheese is melted, and the egg whites are set.
9. Remove from the oven, season the eggs with salt and pepper, and sprinkle with fresh chives. Slice and serve warm.
Notes
Sauté Your Veggies: Be sure to sauté the bell pepper and onion until they are softened. This brings out their natural sweetness and ensures they are tender in the finished pizza.
Even Spreading: Distribute the egg and cheese mixture evenly over the dough to ensure consistent cooking and that every bite is packed with flavor.
Watch the Crust: Keep an eye on the crust during the final minutes of baking to ensure it reaches a lovely golden brown without burning. Ovens can vary, so visual cues are your best friend here.
Resting is Key: Once out of the oven, let the pizza rest for a few minutes before slicing. This allows the cheesy filling to set slightly, making it easier to cut and serve.
