Cheesy Beef and Bean Burrito Bake

  • Total Time: 40 minutes
  • Yield: 6-8 servings 1x

Description

This Cheesy Beef and Bean Burrito Bake is a weeknight wonder, bringing together hearty ground beef, creamy refried beans, zesty salsa, and plenty of melted cheese, all layered between soft flour tortillas. It’s a comforting, family-friendly meal that tastes like your favorite Tex-Mex flavors in a fuss-free, baked dish.

Ingredients

Scale

1 1/2 cup Refried Beans
3 cup Shredded Cheese
1 cup Salsa
3 Large Flour Tortilla
1 bunch Scallion
4 cup Ground Beef
1 dollop Sour Cream

Instructions

Set your oven to 400 degrees F (200 degrees C).

In a 10-inch round baking dish, layer 1 cup of ground beef. Top with one large flour tortilla.

Spread 1/2 cup of refried beans over the tortilla. Add 1 cup of ground beef, 1/2 cup of salsa, 1 cup of shredded cheese, and a whole bunch of scallions. Top with another large flour tortilla.

Spread another 1/2 cup of refried beans over the tortilla. Add 1 cup of ground beef, 1/2 cup of salsa, 1 cup of shredded cheese, and 1 1/2 scallions. Top with a third large flour tortilla.

Spread the remaining 1 cup of ground beef, 1/2 cup of refried beans, and 1 cup of shredded cheese over the top tortilla.

Bake for 20 minutes.

Finish with a dollop of sour cream before serving. Enjoy!

Notes

When spreading the refried beans and ground beef, try to distribute them as evenly as possible across each tortilla layer for consistent flavor in every bite.

While it’s tempting to pile on more, avoid overstuffing the dish, which can lead to uneven cooking and potential overflow in the oven.

For extra gooeyness, you can place the dish under the broiler for a minute or two at the end, watching it very closely to prevent burning.

Allowing the bake to rest for a few minutes after it comes out of the oven helps the layers settle and makes it easier to slice and serve.
