10 large fresh jalapeno peppers
8 oz cream cheese, softened at room temperature
1 cup sharp cheddar cheese, shredded
1/2 teaspoon garlic powder
1/2 cup panko breadcrumbs
1 tablespoon melted butter


Instructions

1. Preheat your oven to 400F (200C) and line a baking sheet with foil.

2. Slice the jalapenos in half lengthwise and carefully remove all seeds and white membranes, as these hold the most heat. Wearing gloves is recommended for sensitive skin.

3. In a bowl, combine the softened cream cheese, shredded cheddar cheese, and garlic powder.

4. Spoon the cheese mixture generously into each jalapeno half.

5. In a separate small bowl, blend the panko breadcrumbs with the melted butter, then sprinkle this mixture evenly over the stuffed jalapenos.

6. Bake for 18 to 22 minutes, or until the peppers are tender and the topping turns a lovely golden brown.

Notes

Seed Removal is Key: For a milder flavor, make sure to thoroughly remove all the white pith and seeds. The pith holds most of the capsaicin, the compound that makes peppers spicy.
