  • Yield: 18-20 cookies 1x

These Chai Spice Sugar Cookies are a warm embrace in every bite, offering a comforting blend of sweet sugar and aromatic chai spices. They are wonderfully soft and chewy with just the right amount of spice to make them truly special. You’ll adore how these cookies bring a cozy, inviting flavor to any occasion.

Ingredients

Scale

2 3/4 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 1/2 teaspoons chai spice mix
1 cup butter (softened)
1 1/2 cups white granulated sugar
1 large egg
3/4 teaspoon vanilla extract
1/4 cup granulated sugar
2 teaspoons chai spice mix

Instructions

Whisk together the flour, baking soda, baking powder, and chai spice mix in a small bowl. Set aside.

In a larger bowl, cream the softened butter and granulated sugar until smooth. Mix in the egg and vanilla extract. Gradually incorporate the dry ingredients.

Form the dough into about 18-20 balls, each roughly 1-1/2 inches in size.

Combine the ingredients for the chai spice coating in a small bowl.

Roll each dough ball in the chai spice mixture and arrange them on an ungreased cookie sheet.

Lightly press the top of each cookie with the bottom of a glass that has been dipped in sugar.

Chill the cookies in the refrigerator for at least 1 hour.

Just before baking, sprinkle the tops of the cookies with additional chai spice.

Bake at 375 degrees F for 10 minutes, taking them out when the edges are just starting to brown.

Let the cookies cool on the baking sheet for 5 minutes before transferring them to a flat surface to finish cooling.

Store the cooled cookies in an airtight container.

Notes

Ensure your butter is truly softened, not melted. This allows it to cream properly with the sugar, creating the ideal base for tender cookies.

Once you add the dry ingredients to the wet, mix only until they are just combined. Overmixing can develop the gluten in the flour, leading to tougher cookies.

The edges of the cookies should just be starting to turn golden brown. The centers may still look a little soft; this is perfect as they will continue to set as they cool.

Allowing the cookies to cool on the baking sheet for a few minutes before transferring them helps them hold their shape and prevents them from breaking.
