Description

Carrot Cake Overnight Oatmeal is a make-ahead breakfast that captures the flavors of carrot cake with warm spices, sweet notes, and a creamy texture. It requires minimal active time and is perfect for busy mornings.


Ingredients

⅔ cup milk of choice (I use 2%)
1 scoop vanilla protein powder *SEE NOTE
2 tbsp full-fat plain greek yogurt
1 tsp maple syrup
1 tsp cinnamon
¼ tsp kosher salt (reduce if using table salt)
⅛ tsp ground ginger
⅛ tsp ground nutmeg
splash of vanilla extract
⅓ cup rolled oats (I use Protein Oats)
¼ cup grated carrots
1 tbsp unsweetened shredded coconut (optional)
1 tbsp finely chopped walnuts (optional)
1 tbsp raisins (optional)
½ tbsp chia seeds


Instructions

In a medium bowl, whisk together the milk, protein powder, Greek yogurt, maple syrup, vanilla extract, and spices until smooth.

Add the rolled oats, grated carrots, shredded coconut, chopped walnuts, raisins, and chia seeds, and stir until everything is well combined.

Transfer the mixture to a jar or airtight container with a lid and refrigerate for at least 3 hours, or preferably overnight.

When ready to eat, stir the overnight oatmeal and optionally, top with a bit more Greek yogurt. Enjoy.

Notes

Using a mason jar or a similar lidded container makes for perfectly portable overnight oats. Just grab and go!

If you find your overnight oats turn out too thick, don’t worry! A splash of milk in the morning is all it takes to thin them out to your perfect consistency.

For the easiest integration, shred your carrots finely. If you use a coarse shred, they might feel a bit too crunchy for some preferences.

Taste a tiny bit of the mixture before refrigerating (if you’re comfortable doing so) to gauge the spice level. You can always add a touch more spice or sweetener in the morning.Ensure you stir everything together very well in step 2. This is crucial for preventing the chia seeds from clumping at the bottom or the oats from sticking together. Evenly distributing them ensures a uniform texture.
