Ingredients
2 large carrots (grated)
3/4 cup granulated sugar
1/2 cup butter, melted
2 eggs
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon
pinch of salt
4 tablespoons butter, melted (for streusel)
1/2 cup all-purpose flour (for streusel)
1/2 cup brown sugar (for streusel)
1 teaspoon cinnamon (for streusel)

Instructions
Preheat oven to 350°F (175°C)
grate carrots to yield 1 1/2 cups
in a mixing bowl, whisk together granulated sugar, melted butter, and eggs
add grated carrots, flour, baking soda, cinnamon, and salt, mixing until combined
spread batter into a prepared baking pan
to make streusel topping, mix melted butter, 1/2 cup flour, brown sugar, 1 tsp cinnamon, and salt until clumbly
sprinkle streusel over the cake batter
bake for 25-30 minutes until golden
Notes
Use fine grating for carrots for even texture
Add 1/2 cup chopped walnuts for extra crunch
