Delicate and comforting, these classic Linzer cookies feature a tender, buttery crumb and a sweet burst of fruit filling, perfect for any occasion. A symphony of textures and flavors with crisp edges and a smooth fruit center, finished with confectioners’ sugar.
Ingredients
12 tablespoons (170g) unsalted butter, softened
1/2 cup (99g) granulated sugar
zest of 1 lemon or 1 teaspoon ground cinnamon
1 large egg yolk
1 teaspoon King Arthur Pure Vanilla Extract
1 1/3 cups (160g) King Arthur Unbleached All-Purpose Flour
3/4 cup (72g) King Arthur Almond Flour
1/4 teaspoon fine sea salt
raspberry jam or lemon curd, for filling
confectioners’ sugar, for dusting
Instructions
Prepare the dough by creaming softened butter with sugar and your choice of lemon zest or cinnamon until airy. Incorporate the egg yolk and vanilla, then gently mix in the combined dry ingredients until just combined, being careful not to overmix.
Divide the dough, form into discs, wrap, and chill until firm before rolling and cutting your beautiful cookies.
Notes
Don’t overmix: Once you add the flour, mix only until the ingredients are just combined. Overmixing develops gluten, leading to tougher cookies.
Chilling is crucial: Don’t skip the chilling step. It makes the dough easier to handle, prevents spreading during baking, and results in a better texture.
Even rolling: Try to roll the dough to a consistent thickness. This ensures that all your cookies bake evenly.
Cool completely: Let the cookies cool completely before filling and dusting them. This prevents the jam from melting too much and the confectioners’ sugar from becoming sticky.
