Blueberry Oatmeal Crumble Bars

  • Total Time: 1 hour 15 minutes
  • Yield: 8-inch square pan 1x

Description

These Blueberry Oatmeal Crumble Bars are the perfect sweet treat for any occasion. Imagine a buttery, crumbly oatmeal crust and topping, generously layered with a sweet and tangy blueberry filling.

Ingredients

Scale

Crust and Crumble Topping
½ cup unsalted butter, melted
1 cup all-purpose flour
¾ cup old-fashioned oats (don’t use quick cook or instant, they’re finer and behave like flour and will make mixture too dry)
½ cup granulated sugar
¼ cup light brown sugar, packed
pinch salt, optional and to taste
Blueberry Layer
12 ounces 2 cups blueberries (fresh or frozen)
⅓ cup granulated sugar
2 tablespoons lemon juice
2 teaspoons cornstarch

Instructions

Preheat the oven to 350F. Line an 8-inch square pan with foil, then spray with cooking spray.

Make the Crust and Crumble Topping. In a microwave-safe bowl, melt the butter. Add flour, oats, sugars, and salt. Mix. Reserve 1 heaping cup of this mixture for the topping. Press the remaining mixture into the prepared pan.

Make the Blueberry Layer. In a bowl, combine blueberries, sugar, lemon juice, and cornstarch. Toss together. Spread over the crust.

Sprinkle the reserved crumble topping over the blueberry layer.

Bake for about 55 minutes, or until set and golden. Let cool for at least 30 minutes before cutting and serving.

Notes

For an even better flavor, you can toast the oats in the oven or in a skillet for a few minutes before adding them to the crumble mixture.

If your blueberries are particularly tart, you can add a little bit more sugar to the filling.

Allow the bars to cool completely before cutting for clean, neat slices.

For easy removal, you can line the baking dish with parchment paper, leaving an overhang on the sides.

Don’t overbake the bars. The top should be golden brown, and the filling should be bubbly.
