Ingredients

Black Bean Mix
1 tsp olive oil
⅓ cup white onion, chopped
1 jalapeño, finely chopped
2 15 oz black beans, drained and rinsed
¾ cup tomato, chopped
1 tsp garlic powder
1 tsp chili powder
1 tsp paprika
1 tsp cumin
½ tsp salt
2 Tbsp hot sauce
Crunch Wrap
6 large tortillas, burrito size
6 tostadas
6 fajita size tortillas, *to close the wrap
⅓ cup sour cream
1½ cup cheese, shredded
1½ cup romaine, shredded
½ cup salsa, *optional
1 avocado, sliced thin, *optional
2 Tbsp cilantro, chopped


Instructions

Prep and gather all ingredients, rinsing and chopping the veggies. In a skillet, saut onions in oil for 3 minutes. Add seasonings, tomato, black beans, jalapeos, and hot sauce. Simmer the bean mix, then remove from heat.

Assemble the crunch wraps by layering a large tortilla with the bean mixture, cheese, sour cream, lettuce, and avocado, topped with a tostada. Fold the edges of the tortilla. Heat a pan, spritzing with oil. Cook the crunch wrap on medium heat, folded side down for 2-3 minutes until browned. Flip and toast the other side for another 3 minutes until browned.

Repeat until all wraps are made. Add desired toppings and enjoy.

Notes

Don’t Overfill. Be mindful not to overload the tortillas with too much filling, as this can make them difficult to fold and cook.

Get a Good Crisp. Ensure you cook the crunch wraps until the tortilla is golden brown and crispy on both sides for optimum texture.
