1 lb mild or sage turkey Italian sausage (or beef sausage), casings removed
10 cups dried bread cubes (white or sourdough)
1/2 cup (1 stick) unsalted butter
2 medium yellow onions, finely diced
4 stalks celery, finely diced
3 cloves garlic, minced
2.5 cups low-sodium chicken broth
2 large eggs, beaten
1 tbsp fresh sage, chopped
1 tbsp fresh thyme, chopped
Salt and black pepper to taste


Instructions

First, preheat your oven to 350F (175C) and lightly grease a 9×13-inch baking dish. Brown the sausage in a skillet, crumbling it as it cooks, then add it to a big bowl with the dried bread cubes. Melt the butter in the same skillet, then cook the onions and celery until tender, adding the garlic, sage, and thyme for the last minute. Pour this lovely vegetable and herb mixture over the bread and sausage. Whisk together the chicken broth, eggs, salt, and pepper, then pour it over the stuffing ingredients and gently mix until the bread is moistened. Finally, transfer the stuffing to your prepared baking dish, cover it with foil, and bake for 30 minutes. Remove the foil and continue baking for another 15 to 20 minutes, or until the top is beautifully golden and delightfully crisp.
