Ingredients
For the Turkey
- 1 lb ground turkey, 1 tbsp sesame oil
- 1 tbsp each: soy sauce, sriracha, honey
- 1 tsp smoked paprika, 1/2 tsp each: garlic powder, pepper, salt
- 1/4 cup water
For the Sauce & Bowls
- 1 cup mayo, 2/3 cup Thai sweet chili sauce, 1-3 tbsp sriracha
- Cooked rice (white, brown, or cauliflower)
- Toppings: Shredded carrots, cucumbers, avocado, edamame
Instructions
Sauce: Whisk mayo, sweet chili sauce, and sriracha until smooth. Chill in the fridge to allow flavors to meld.
Brown: Heat sesame oil in a large skillet. Cook turkey, breaking it into small crumbles, until no longer pink.
Glaze: Stir in paprika, garlic powder, soy sauce, sriracha, honey, salt, pepper, and water. Simmer 2–3 mins until liquid reduces to a glaze.
Assemble: Stir 2 tbsp of the sauce into the turkey. Serve over rice with arranged vegetables. Drizzle generously with remaining sauce.
Notes
Lean & Clean: Turkey is lean; remove it from heat immediately once the water reduces to a glaze to prevent drying out.
Customize the Heat: Sweet chili sauce is the base; adjust the sriracha level starting with 1 tablespoon and increasing based on your spice tolerance.
