1 large egg
2 small/medium or 1 extra-large ripe bananas, mashed
½ cup light brown sugar, packed
¼ cup granulated sugar
¼ cup unsalted butter, softened
2 teaspoons vanilla extract
1 ½ cups old-fashioned whole rolled oats
1 ¼ cups all-purpose flour
½ to 1 teaspoon cinnamon
½ teaspoon baking soda
¼ teaspoon salt
1 ¼ cups semi-sweet chocolate chips


Instructions

Preheat oven to 350°F (180°C)
Line a 9×13-inch baking pan with parchment paper
In a large bowl, mix mashed bananas, sugars, egg, and vanilla
Add softened butter and combine
Combine flour, oats, baking soda, salt, and cinnamon in another bowl
Gradually mix dry ingredients into the wet mixture until just combined
Fold in ¾ cup of chocolate chips
Spread the mixture evenly in the prepared pan
Sprinkle remaining ¼ cup chocolate chips on top
Bake for 25 minutes until golden brown
Let cool before slicing into bars

Notes

Use ripe bananas for maximum sweetness
Ensure butter is softened, not melted
Only use old-fashioned oats for texture
Store in an airtight container for up to 3 days
For vegan version, substitute butter with coconut oil and use a flax egg
