Perfect for any gathering, this warm cobbler features a tender banana base marbled with silky cream cheese for a professional-grade dessert your family will love.

Ingredients

Scale

For the Cobbler

  • 4 ripe bananas
  • 1 cup (120g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 large eggs
  • 1/2 cup (120ml) milk
  • 1 tsp vanilla extract (or vanilla juice)
  • 1/2 cup (115g) unsalted butter, melted

For the Swirl

  • 8 oz (225g) cream cheese, softened

Instructions

Step 1: Prep and Mash
Preheat your oven to 350°F. Peel and mash your ripe bananas in a bowl until they are smooth but still have a few small chunks for texture.

Step 2: Soften the Cheese
In a separate bowl, work the softened cream cheese until it is smooth, creamy, and easy to dollop.

Step 3: Mix Dry and Wet
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In another bowl, whisk together the mashed bananas, melted butter, eggs, milk, and vanilla.

Step 4: Fold and Assemble
Pour the wet ingredients into the well of the dry ingredients and fold them together gently with a spatula until just combined. Pour the batter into a greased 9×13-inch baking dish.

Step 5: The Cream Cheese Swirl
Drop spoonfuls of the softened cream cheese over the top of the batter. Use a butter knife to gently swirl the cheese into the batter, creating a beautiful marbled pattern.

Step 6: Bake
Bake for 30-35 minutes until the top is golden brown and a toothpick inserted into the center of the cake portion comes out clean.

Notes

Storage Instructions: Because this recipe contains cream cheese, leftovers should be cooled to room temperature and then stored in an airtight container in the refrigerator for up to 4 days.

Banana Quality: For the best flavor, use bananas that are heavily spotted with brown or are nearly black. These have the highest sugar content and will provide a much more intense banana aroma than yellow ones.

Variation – Nutty Addition: Stir in 1/2 cup of chopped walnuts or pecans to the batter before pouring it into the pan to add a pleasant earthy crunch that complements the creamy cheesecake pockets.
