Ingredients
Salmon
4 salmon filets, skinless
1 tablespoon olive oil
2 teaspoons dried Italian seasoning
½ teaspoon Kosher salt
¼ teaspoon cracked black pepper
Sauce
3 tablespoons butter
2 teaspoon garlic, minced
3 tablespoons flour
1 ½ cups chicken broth
¾ cup heavy cream
½ cup parmesan, grated
½ cup sun-dried tomatoes, drained
1 teaspoon dried Italian seasoning
1 teaspoon lemon zest
fresh basil, for garnish
Instructions
Salmon:
Brush 4 skinless salmon filets with olive oil. Season with Italian seasoning, salt, and pepper.
Heat olive oil in a skillet. Cook salmon until golden, about 3 minutes per side. Set aside.
Sauce:
Melt butter in the same skillet. Saut minced garlic. Add flour, stirring to form a paste.
Whisk in chicken broth, heavy cream, and parmesan. Stir in sun-dried tomatoes, Italian seasoning, and lemon zest. Season with salt and pepper.
Simmer the sauce until thickened.
Return salmon to the skillet, spooning sauce over the top.
Simmer for 10 minutes. Garnish with fresh basil and lemon zest. Serve warm.
Notes
Always pat your salmon fillets dry before cooking. This helps achieve a nice sear and prevents them from steaming in the pan which can ruin texture.
Ensure your pan isn’t overcrowded, so the salmon can cook evenly.
The salmon is ready when it flakes easily with a fork. It will also appear opaque.
Always give the dish a few minutes to rest after you take it out of the oven. This helps the salmon retain its moisture and the flavors to fully meld.
If you use a skillet, you can transfer it straight to the oven which saves on washing extra dishes.
