Ingredients
• 1/3 cup full-fat plain Greek yogurt
• 1/4 cup extra virgin olive oil
• 1 1/2 pounds boneless skinless chicken breasts or thighs, cubed
• 6 garlic cloves, chopped
• 2 shallots, chopped
• 1 tablespoon smoked paprika
• 1 tablespoon chopped fresh oregano
• chili flakes, Kosher salt, and black pepper
• 2 Persian cucumbers, chopped
• 1 avocado, diced
• 2 tablespoons lemon juice
• 1/4 cup fresh dill, chopped
• 6 ounces crumbled feta cheese
• 1-2 cups Tzakiki sauce
• lettuce, peperoncini, onion, tomatoes, and pitas, for serving
• 1/2 cup tahini
• 2 teaspoons grated ginger
• 1 clove garlic, grated
• 2 teaspoons tamari
• 1 tablespoon lemon juice
• 2 teaspoons honey
Instructions
Combine yogurt, olive oil, chicken, garlic, shallots, paprika, oregano, chili flakes, salt, and pepper in a bowl. Marinate for 15 minutes at room temperature or refrigerate overnight.
Preheat your oven to 425F. Spread the chicken on a baking sheet and bake for 15 minutes. Toss the chicken and bake for an additional 5-10 minutes, or until cooked through. Switch the oven to broil and broil for 1-2 minutes until the edges are charred.
While the chicken bakes, mix together the cucumbers, avocado, lemon juice, dill, salt, and pepper.
To make the tahini sauce, combine all tahini ingredients with 1/4 cup water in a blender. Blend until smooth, adding more water if needed to reach your desired consistency. Season with salt to taste.
Assemble your bowls by layering lettuce, followed by the baked chicken, cucumber avocado mixture, crumbled feta, and any other preferred toppings. Add dollops of Tzaziki sauce and finish with a drizzle of the tahini sauce.
Notes
The yogurt in the marinade works wonders to tenderize the chicken, making it incredibly moist and flavorful.
The broil step is quick and adds a fantastic finish, but it requires your attention. Keep a close eye to achieve perfectly charred edges without burning.
Always taste your dressings and salads before serving. A little extra salt, pepper, or lemon juice can make all the difference.
If you have access to them, fresh oregano and dill make a significant difference in the brightness of these bowls.
