Description
A brilliant, healthy twist on the classic Girl Scout cookie. Using crisp apple rings as a base and a nutty, coconut-rich topping, these bite-sized treats offer all the caramel-like richness and chocolatey goodness without the heavy dough.
Ingredients
- 1 large Honeycrisp or Pink Lady apple
- 1/3 cup unsweetened shredded coconut
- 3 tbsp almond butter (or cashew/seed butter)
- 1/2 tbsp maple syrup
- 2 tbsp chocolate chips
- 1/2 tsp coconut oil
Instructions
Prep: Slice the apple into 1/4-inch rounds. Use a small cutter or bottle cap to remove the core, creating rings.
Topping: Stir together shredded coconut, almond butter, and maple syrup in a small bowl until thick.
Assemble: Pat apple rings dry with a paper towel. Press the coconut mixture firmly onto the top of each ring.
Melt: Microwave chocolate chips and coconut oil in 15-second bursts until smooth.
Set: Drizzle chocolate over the rings. Place on a parchment-lined plate and freeze for 5–10 mins until firm.
Notes
Apple Choice: Use firm varieties like Honeycrisp or Pink Lady to provide the structural ‘crunch’ necessary to mimic a cookie.
The Stick Factor: Drying the apple slices is the most critical step. Surface juice will prevent the almond butter topping from adhering properly.
Storage: These are best enjoyed immediately. Extended refrigeration will cause the apples to release moisture, potentially softening the topping.
