Instructions

Prep: Preheat oven to 350°F. Spray a 9×5-inch loaf pan with nonstick spray.

Topping: Whisk together the brown sugar and cinnamon in a small bowl; set aside.

Batter: Cream granulated sugar and softened butter until smooth. Beat in eggs and vanilla. Stir in flour, baking powder, and milk until just combined (do not overmix).

Layer: Pour half of the batter into the pan. Top with half of the apples and half of the cinnamon-sugar mixture. Repeat with the remaining batter, apples, and cinnamon-sugar.

Bake: Bake for 50–60 mins until a toothpick comes out clean. Allow to cool completely in the pan to let the structure and fruit juices set.

Apple Choice: Use firm varieties like Fuji or Granny Smith. They maintain their structure during baking, whereas softer varieties may become mushy.

Layering Secret: Gently press the apple chunks into the batter. This ensures the fruit stays suspended throughout the loaf rather than settling or sitting loosely on top.
