Ingredients
For the oats:
1 cup oats
1 cup vanilla almond milk
1 tablespoon maple syrup
1 tablespoon chia seeds
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
For the apple compote:
1 tablespoon butter or vegan butter substitute
1 large apple peeled, cored, and diced
1/2 teaspoon ground cinnamon
2 tablespoons maple syrup
1 tablespoon water
1 teaspoon corn starch
Instructions
For the oats
In a medium bowl, combine the oats, almond milk, maple syrup, chia seeds, vanilla extract, cinnamon, and salt. Mix everything thoroughly. Cover the bowl and refrigerate overnight.
For the apple compote
Melt the butter in a medium saucepan over medium heat. Add the diced apples, cinnamon, and maple syrup. Stir and cook for 3 to 5 minutes until the apples are very tender.
In a small bowl, whisk together the water and cornstarch. Pour this mixture into the saucepan and continue to cook for another 1 to 2 minutes until the compote thickens. Remove from heat and let it cool completely.
To serve
Spoon the prepared overnight oats into a cup and top generously with the cooled apple compote.
Notes
For the best texture, ensure your oats are completely submerged in the liquid before refrigerating. This ensures even softening.
Dice the apple finely. Larger chunks might not soften enough overnight, while smaller pieces will integrate beautifully into the oats.
Taste the mixture before chilling, if you can bear to wait, and adjust the sweetener to your liking. It’s easier to add more sweetness than to take it away later.
