Ingredients
0.5 cup salted butter, at room temperature
0.33333334326744 cup confectioners’ sugar, plus extra for dusting
1 teaspoon vanilla extract
1 teaspoon almond extract
0.125 teaspoon salt
0.75 cup all-purpose flour, sifted
2 tablespoons all-purpose flour, sifted
0.5 cup almonds, finely chopped
Instructions
Preheat your oven to 325 degrees F (165 degrees C) and gather all your ingredients.
In a bowl, beat the softened butter and confectioners’ sugar with an electric mixer until the mixture is smooth and creamy. Stir in the vanilla extract, almond extract, and salt until just combined.
Gradually mix in the sifted all-purpose flour (3/4 cup plus 2 tablespoons) and the finely chopped almonds until the dough is just combined.
Shape the dough into small crescent shapes and place them on an ungreased baking sheet, leaving about 2 inches of space between them.
Bake for approximately 15 minutes, or until the edges of the cookies are lightly golden. Let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Once cooled, roll the cookies in sifted confectioners’ sugar.
Notes
Don’t Overmix: Once you add the flour, mix only until the dough is just combined. Overmixing can develop the gluten in the flour, leading to tougher cookies.
Cooling is Key: Allow the cookies to cool on the baking sheet for a few minutes before moving them. This helps them set up properly and prevents them from breaking.
Gentle Shaping: Handle the dough gently when shaping the crescents. This ensures a tender cookie.
Baking Doneness: Keep an eye on the cookies as they bake. They should be lightly golden around the edges, not deeply browned, to maintain their delicate texture.
Dusting Technique: For the best dusting effect, wait until the cookies are completely cool before rolling them in confectioners’ sugar.
