Air Fryer Elote Mexican Street Corn

  • Total Time: 15 minutes
  • Yield: 4 servings 1x

Description

Get ready to experience a flavor explosion with this Air Fryer Elote Mexican Street Corn! This beloved Mexican street food dish, usually grilled to smoky perfection, gets a speedy and sensational makeover in the air fryer. Sweet corn kernels are coated in a creamy, tangy, and spicy dressing, then showered with salty cheese and fresh cilantro for an irresistible side or appetizer that’s perfect for any occasion.

Ingredients

Scale

4 corn on the cob
1 teaspoon chili powder
2 Tablespoons cilantro, fresh, chopped
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/2 cup Feta cheese
1 teaspoon lime juice, freshly squeezed, optional
2 Tablespoons butter, melted

Instructions

1. Place the corn in the air fryer basket.

2. Brush both sides of the corn with melted butter.

3. Air fry the corn at 400F for 10 minutes, flipping it halfway through.

4. Combine chili powder, salt, and pepper with the remaining butter.

5. Brush the seasoned butter onto the cooked corn. Top with crumbled feta cheese, fresh cilantro, and lime juice before serving.

Notes

Don’t Overcrowd: Ensure your air fryer basket isn’t too full when cooking the corn. This allows the kernels to cook evenly and develop those desirable slightly charred edges. You may need to cook in batches depending on your air fryer size.

Toss Gently: When combining the hot corn with the dressing and toppings, be gentle to avoid mushing the kernels. You want to coat them, not mash them.

Fresh is Best: Always opt for fresh lime juice and fresh cilantro for the most vibrant and authentic flavor. Bottled lime juice just doesn’t quite compare.

Taste and Adjust: Before serving, give your elote a quick taste. You might want a little more lime juice for tanginess, a touch more chili powder for spice, or a bit more salt.
