Ingredients
1 cup salted butter, room temperature
½ cup powdered sugar
2 teaspoons vanilla extract
2 cups all-purpose flour
1 cup mini chocolate chips
½ cup toffee bits
Instructions
Preheat oven to 350°F (177°C). Line baking sheet with parchment paper.
Using electric mixer on medium-high speed, cream butter and powdered sugar until light and fluffy.
Add vanilla extract and beat until smooth.
Reduce mixer speed to low; gradually add flour, mixing just until dough forms.
Fold in mini chocolate chips and toffee bits by hand.
Shape dough into 1-inch balls, place on baking sheet 1 inch apart. Lightly press each ball to slightly flatten.
Bake 12-14 minutes until cookies are firm to touch and edges just begin to brown.
Cool on baking sheet 5 minutes before transferring to wire rack. Bake remaining dough similarly, cooling sheets between batches.
Store cookies in airtight container at room temperature up to 3 days.
