Ingredients
For the Tilapia
- 1 lb tilapia fillets
- 2 tbsp butter (for searing)
- Salt and pepper
For the Roasted Pepper Sauce
- 1 tbsp butter, 1 medium onion (diced), 2 garlic cloves (minced)
- 12 oz roasted peppers (6oz chopped, 6oz pureed)
- 3/4 cup heavy cream, 1/2 cup grated Parmesan
Instructions
Sear: Pat tilapia dry. Melt 2 tbsp butter in a skillet over medium-high. Fry fillets 3–4 mins per side until opaque; set aside.
Aromatics: Sauté onion in 1 tbsp butter for 5 mins until soft.
Base: Stir in garlic and all roasted peppers. Cook 5 mins.
Sauce: Lower heat; stir in heavy cream and Parmesan. Turn off heat to prevent breaking.
Finish: Return tilapia to the pan and spoon sauce over the fillets. Garnish with parsley.
