The Cheesecake Filling

  • 6 oz full-fat cream cheese, softened
  • 2 tablespoons plain Greek yogurt
  • 3 tablespoons Swerve Confectioner’s Sugar Substitute (powdered erythritol)
  • 1 teaspoon vanilla extract
  • 1/3 cup fresh blueberries

The Wraps & Topping

  • 6 zero-carb or low-carb small tortillas (keto-friendly)
  • 2 tablespoons butter, melted
  • Additional Swerve Confectioner’s, for dusting

Instructions

Prep
Preheat your air fryer to 375°F (190°C). Grease the air fryer basket or rack lightly.

Make Filling
In a small mixing bowl, combine the softened cream cheese, Greek yogurt, vanilla extract, and 3 tablespoons of Swerve.

Blend
Mix until the mixture is smooth, creamy, and well-combined (no lumps).

Fill
Lay out the tortillas. Spread a generous layer of the cream cheese mixture down the center of each tortilla.

Top
Distribute the fresh blueberries evenly over the cream cheese layer.

Roll
Roll the tortillas tightly around the filling.

Place
Place them seam-side down into the air fryer basket (this prevents them from unrolling). Ensure they are in a single layer.

Brush
Brush the tops and sides of the tortillas generously with the melted butter.

Cook
Air fry for 8–10 minutes. Check: Cook until the roll-ups are golden brown and crispy on the outside. (Check at the 6-minute mark; if browning too fast, lower heat to 350°F).

Serve
Remove carefully (filling will be hot!). Dust with additional powdered Swerve sweetener and serve warm.

Notes

Don’t Overfill: Resist the urge to stuff them! If you put too much filling inside, it will ooze out into the air fryer basket during cooking. A thin, even layer down the center is best.

Seam-Side Down: Placing the rolls seam-side down is crucial. The weight of the roll combined with the heat seals the tortilla shut, eliminating the need for toothpicks.

Oven Method: No air fryer? No problem. Place the rolls on a baking sheet and bake at 400°F (200°C) for 10–12 minutes until golden.

Berry Tip: Fresh blueberries are preferred. Frozen berries release significantly more liquid as they cook, which can make the bottom of the tortilla soggy. If using frozen, thaw and drain them well first.
